Two different ounces
This is the trap that ruins recipes. A weight ounce is 28.35 g and depends on the ingredient: 8 oz of flour is about 1.8 cups, 8 oz of sugar about 1.1 cups. A fluid ounce is 29.57 mL of volume, so 8 fl oz is exactly 1 cup of any liquid.
Which one does your recipe mean?
- Liquids (milk, water, oil): fluid ounces
- Cheese, chocolate, nuts: weight ounces
- US recipes usually mean weight for solids, fluid for liquids — but not always
- If the number is a round 8, 12 or 16 for a liquid, it is probably fluid ounces
Common conversions
8 oz chocolate chips ≈ 1 1/3 cups. 8 oz shredded cheese ≈ 2 cups. 4 oz butter = 1 stick = 1/2 cup. 1 cup of liquid = 8 fl oz = 236.6 mL.
Weighing beats measuring
For anything shredded, chopped or packed, weight is the only reliable measure — a cup of grated cheese varies by 30% depending on how firmly it is packed.
Frequently Asked Questions
Is 8 oz always 1 cup?
Only for liquids. For flour, 8 oz is about 1.8 cups; for sugar, about 1.1 cups.
Why does my recipe say 16 oz?
That is one pound by weight — common for cheese, chocolate and butter.
How do I tell weight from fluid ounces?
Look at the ingredient: liquids use fl oz, solids use oz. Ambiguous recipes usually mean weight for anything you would put on a scale.
